Chinese Fried Walnuts Recipe

6 c. water
4 c. walnuts
1/2 c. sugar
salad oil

In 4 qt. saucepan over high heat, heat water to boiling; add walnuts and heat to boiling, cook one minute. Drain and rinse walnuts under running hot water. In large bowl with rubber spatula, gently stir warm walnuts with sugar until sugar dissolves. If necessary, let mix stand for 5 minutes to dissolve sugar.
Meanwhile heat about 1 inch of salad oil in heavy saucepan to 350º. With slotted spoon add about half of walnuts to oil. Fry for 5 minutes or until golden brown, stirring often. With slotted spoon place walnuts in coarse sieve over bowl to drain. Cook second half while first is draining. When drained, sprinkle with salt stirring lightly to keep walnuts from sticking together. Cool on paper towels and store in tightly covered containers.
