1/2 c. Margarine
2/3 c White sugar
2 Eggs
1 tsp. Vanilla
2 c. Flour
2 tsp. Baking powder
1/2 tsp. Salt
Zest of one lemon
1/3 c. Milk
1/4 c. Icing sugar
2 tbsp. Lemon juice

Directions:
Directions:
In a large bowl, using an electric mixer, cream margarine and sugar until light and fluffy. Beat in eggs and vanilla until light. In a medium size bowl, stir together flour, baking powder, and salt; add to creamed mixture alternately with lemon zest, juice and milk; starting and ending with dry ingredients. Mix well after each addition. Turn batter info loaf pan, smoothing top with spatula.

Bake 55 to 60 minutes or until surface springs back when lightly touched. Cool on rack 10 minutes. Remove from pan and cool on rack.

Glaze:
In a small bowl combine icing sugar and lemon juice until smooth. Drizzle over top of loaf when cooled. Decorate with additional lemon zest if desired.
