Cake:
2 cups sugar
1 1/2 cups canola oil
3 eggs
4 bananas
3 cups flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
2 teaspoons soda
1 cups pecans, chopped (optional)



Frosting:
1 stick butter, softened
1- 8 ounce cream cheese, softened
1 box powdered sugar
1 teaspoon vanilla

Directions:
Directions:
Mix sugar and oil until well blended.  Add eggs 1 at a time beating after each egg  is added.  Break bananas into chunks and add to batter.  Sift flour, measure, add cinnamon, nutmeg, salt, and soda, and sift again.  Add slowly to batter, continue beating.  Fold in pecans.  Grease and flour an angel food pan or bundt pan.  Bake 1 hour at 350º.  Let cake cool for 30 minutes before removing from pan.  May be frozen.

Frosting:  Cream together the butter and cream cheese. Add the powdered sugar and vanilla.  Continue beating the frosting until it is of spreading consistency.
