500 g Thick natural yoghurt
1 Medium cucumber
6 Cloves of garlic
1 tsp. Finely chopped dill (or parsley if preferred)
2 tsp. Vinegar
2 tbsp. Olive oil
Pinch of salt

Directions:
Directions:
Coarsely grate the cucumber and put in a sieve. Press it firmly to remove any excess liquid then put it in a large bowl. Crush the garlic in a garlic press and add to the yoghurt along with the cucumber. Add the remaining ingredients (dill, salt, olive oil and vinegar) and mix well. Cover with plastic wrap or lid and chill for several hours to give the flavour a chance to develop.
