1/2 C sugar
1/2 C brown sugar
1/2 C butter, softened
2 t vanilla
1 egg
1 C flour
1 C old-fashioned rolled oats
1/2 t baking powder
1/2 t salt
Filling:
11 C sliced peeled peaches (~5 lbs)
1/3 C sugar
2 T flour
2 T fresh lemon juice
Cooking spray

Directions:
Directions:
Preheat oven to 350. To prepare topping, place first 3 ingredients in a large bowl and beat until fluffy. Add vanilla and egg; beat well. In a separate bowl combine flour, oats, baking powder, and salt. Add to sugar mixture until blended. Cover and chill 30 mins.
To make filling, combine peaches, sugar, flour, and lemon juice in a bowl; toss to coat. Spoon mix into a 13x9 casserole dish coated in cooking spray. Dollop 12 mounds of chilled dough over peach mixture in even intervals. Bake for 40 mins or until lightly browned and bubbly. (12 servings)
