4 c. huckleberries
1/2 c. water
1/4 c. lemon juice
1 2 oz. pkg. fruit pectin
6 c. sugar

Directions:
Directions:
Wash huckleberries and add to pan. Crush berries with a masher. Add all ingredients but the pectin to the pan and bring to a full boil. While stirring add fruit pectin and continue stirring for 2 min. Ladle jam into hot jars leaving 1/4 inch headspace. Add lids and process in a boiling-water bath canner for 20 min.

This is sooo yummy! We picked fresh huckleberries in McCall last summer and I made jam with some of them. Picking huckleberries is a good reason to come visit Idaho.
