1 quart chopped cucumbers
2 c. chopped onion
1 c. chopped green pepper
1 c. red pepper
2 chopped jalapenos
1/4 c. salt
3 1/2 c. sugar
1 T. celery seed
1 T. mustard seed
2 c. cider vinegar
1 T. crushed red pepper

Combine cucumbers, onion, jalapenos, green and red peppers in a large bowl; sprinkle with salt and cover with cold water. Let stand 2 hours. Drain; rinse and drain throughly. Combine sugar, spices and vinegar in a large saucepan. Bring to a boil. Add drained vegetables; simmer 10 minutes. Pack hot relish into jars, leaving 1/4-inch headspace. Remove air bubbles and adjust caps. Process 15 minutes in a boiling-water canner.

I made this with the cucumbers with the light green skins you don't have to peel. (Armeinians) I grew them in my garden and had so many I decided to make this relish. Everyone really liked it and I ended up making several batches.
