10 ounces extra-sharp cheddar cheese, grated
1/8 tsp cayenne pepper
Salt to taste, if needede
5 or 6 grinds of black pepper
3/4 cup mayo
1 (2 ounce) jar diced pimentos

Stir everything together until well mixed. Taste and add salt if needed.

I am not sure why pimento cheese has a bad name with young people. Try it, it is really good! I serve this as an appetizer with Wheat Thins, celery or Fritos. It is great spread on crusty breaed and toasted.
