Smoked Haddock Fillets
Thick Cream
Tomatoes - skinned, deseeded and diced
Cheddar Cheese
Black Pepper

Directions:
Directions:
Simmer smoked fish in water approximately five minutes
Flake fish and remove skin and bones (if any)
Butter ramekins and place flaked fish about 2/3 full
cover in diced tomatoes
Add plenty of fresh black pepper
Add cream to half ramekin
Add grated cheddar to top

Place in oven - 380F/190C for approximately 15 to 20 minutes until hot and bubbling
Serve with sliced brown bread. Delicious
