4 pieces of skate wing
1/2 cup butter
1/2 cup small capers
chopped parsley
salt and black pepper
2 tbsp white wine vinegar

Directions:
Directions:
Bring large pot water to boil, add salt and 1 tbsp vinegar
Place skate wings in pot and cover - simmer for approximately 8 minutes - remove and keep warm
Meanwhile, place butter in frying pan and heat until it starts to brown - add two tbsp vinegar to butter
Pour butter mixture over skate
Scatter capers, parsley salt and pepper over fish - serve immediately
