Pastry:
6 cups of flour
1 pound of lard (not shortening)
1 tbsp salt
1 egg
1 tbsp vinegar

Filling:
Half cup of brown sugar (packed)
1 cup golden syrup
1/4 cup butter
2 eggs
1 cup seedless raisins
1/2 cup of finely chopped walnuts
2 tbsp of lemon juice
1/2 tsp vanilla
1/4 tsp of nutmeg

Directions:

Pastry
Drop one egg into measuring cup and add 1 tbsp vinegar and them fill cup with water - mix.
Mix flour, salt and lard together and then add liquid. Mix together until all liquid is absorbed - form into two pieces and store in refrigerator. Use as needed for pies or tarts.

Filling
Cream butter and add sugar, mix thoroughly.
Add eggs, well beaten, fruit, flavouring and syrup.
Fill pastry shells and bake
Bake on lowest rack in hot oven 450F/230C - 15 to 20 minutes - let stand 10 minutes before removing from tin.
