2 eggs
1 cup milk
1 cup flour
1/2 tsp. salt

Directions:

Break the eggs into a bowl. Add the milk, flour and salt. Mix well with a spoon, but disregard the lumps. Fill greased muffin tins three-quarter full. Put in the oven and turn the dial to 450ºF. Bake for 30 minutes, or until golden and risen.

Serve with butter and jam, honey or whatever you like to eat at breakfast time.

The glory of this dish is that it goes into a cold oven. This is nice when you're baking with toddlers and don't want them sticking their hands into the hot oven as you open it to insert your muffin tin! It is a yummy and quick breakfast dish.
