2 packages frozen chopped spinach, defrosted and squeezed dry
1lb cottage cheese
4 eggs
3/4 cup or to taste grated parmesan
salt, pepper
a few spoonfuls of plain yogurt (optional)

Directions:
Directions:
Preheat the oven to 350-375ºF. Mix all the ingredients together (except the yogurt). Bake in a buttered casserole (a flan-shaped dish is best) for 45 minutes, or until a knife inserted into the centre comes out clean.

Serve with a dollop of yogurt.

You can substitute cheddar cheese for the parmesan if you like, and add a few spring onions for contrast. You can substitute chopped broccoli for spinach. However, Rose reports that it just doesn't taste the same if you use fresh, rather than packaged, spinach! Any kid who likes eggs will love this and fail to notice the spinach.
