2 cups Israeli couscous
Add chopped vegetables:
Tomato
Peppers— green yellow and or red
Green onion
Cilantro
Cucumber
I have also used artichokes and avocado

1/2 cup feta cheese
1/2 cup toasted pine nuts






Directions:
Directions:
Toast couscous in a frying pan until golden brown.
Do not add any oil etc.

Add Chicken broth to cover, Let simmer until liquid is absorbed
Add additional broth until the couscous is soft but still holds its shape

Drain in a colander

Add vegetables, feta and pine nuts

Toss and serve at room temp.

If the mix is dry add a little rice wine vinegar
Make a day ahead of time for the flavors to meld
