1/3 C soft butter (don't melt)
3/4 C sugar
1 egg + 1 egg yolk
1 T lemon rind - grated
2 C flour (all-purpose)
1/4 tsp salt
1 egg white, slightly beaten

Directions:
Directions:
Cream butter & sugar. Mix in egg, egg yolk & lemon rind, mix flour & salt, stir into the cream mixture & work with hands; till dough forms a ball. Preheat oven 350º F. Shape dough about size of walnut. Roll with hands into 3/8" diameter 3" -in. long. Fold around to form twist. Place on greased baking sheet. Brush with egg whites, then bake 8-10 min. Makes 2 doz. - looks color is light.
