3 c. all purpose flour
2 1/4 c. granulated sugar
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 c. corn oil
1 1/2 c. milk
3 eggs
2 tsp. almond extract
4 T. poppy seeds

Directions:
Directions:
Heat oven to 350º
In a large bowl, sift together the flour, sugar, baking powder, and salt.
In another bowl, whisk together the corn oil, milk, eggs, and almond extract.
Pour the milk mixture into the flour mixture and mix just until the dry ingredients are moistened.
Stir in the poppy seeds.
Fill greased muffin tins.
Bake for 30 minutes or until the muffins are golden brown.
Makes two dozen muffins.
