1 1/4 cup butter
3 eggs
1 cup sugar
2 cups grated carrot
1 cup coconut
1 small tin crushed pineapple and juice
3 T cocoa
4 T boiling water
2 1/2 cups flour
1 2 tsp baking soda
1 tsp cinnamon
1 tsp salt
1 cup chopped walnuts

Directions:
Directions:
Cream butter, eggs and sugar. Add carrots coconut and pineapple and juice. Mix cocoa in boiling water. Beat into creamed mixture. Add dry ingredients and mix walnuts in. Bake in a greased 9 x 13 in pan or a bundt cake pan at 350º for 40 - 50 minutes. Ice with a cream cheese frosting.
