1 lb. ground beef
1 onion
1 can shoepeg corn
1 can rotel
1 can stewed tomatoes
2-3 cans of beans (black beans, pinto beans, navy beans or kidney beans) my choice is usually a mixture of 3 of them.
1 pkg ranch dressing mix
1 pkg taco seasoning
1 c water
1 tsp pepper

chop onion
brown beef and onion together.
drain
In a large pot mix the beef and onion mixture with all of the above ingredients. IMPORTANT- do not drain any of the ingredients.
cook on low for 30-60 minutes.

Cooking times vary. I have put on med heat for 10 minutes to cook it faster.
I sprinkle cheese on top and serve with tortilla chips. Freezes well and lasts for about 3 days in the refrigerator.
