1 lb. orzo
3 T. olive oil
1/2 c. dried cherries
1/2 c. fresh basil
1/4 c. toasted pine nuts
11/2 fresh lemon
11/2 tsp. salt
1 tsp. pepper
2 c. arugula
3/4 c. crumbled feta cheese

Directions:

Cook the orzo according to the package directions
usually 8-10 minutes be sure its firm.
Spread out and cool on a cookie sheet. Make sure it is drained well.
Drizzle the orzo with the olive oil. Then add to a large bowl and add: the cherries, fresh basil torn into pieces, the toasted pine nuts 3T. fresh lemon,
salt and pepper.
Stir in the arugula and then on the very top crumble feta cheese.
Toss to combine and serve at room temperature.
