1 cup rice
American cheese cut into 1/4"x1/4"x1" pieces
4 cups water
1 tsp. salt
2 eggs
1 tbsp. chopped parsley
3 tbsp. grated romano cheese
Beat the eggs, cheese and parsley together'
Fresh bread crumbs

Directions:
Directions:
Combine rice,water and salt in sauce pan. Bring to a boil, lower heat and simmer UNCOVERED until all the water is absorbed and the rice is PASTY.
Remove from heat and add the remaining ingredients except bread crumbs mixing well. Spread on platter to cool enough to handle.Shape into croquettes inserting a piece of American cheese in the center of each.
Roll in bread crumbs, fry in deep oil until golden brown. Drain on paper towel, Enjoy
