4 cups water
1 medium onion, chopped
2 stalks celery, chopped
1 medium carrot chopped
6 potatoes, peeled and diced
1/2 cup ham or kielbasa sausage
4 cups milk
2/3 cup butter
3/4 cup flour
1-2 tsp. black pepper
salt to taste (up to 1 T.)

Bring water to boil in 2 ½ quart or larger saucepan. Add onions and celery and continue boiling for 5 minutes. Add potatoes and ham and continue boiling for about 10 minutes. Add milk and heave over medium heat to almost a boil. Small bubbles will start forming on top of the soup mixture. Once you add the milk, be careful not to let the mixture boil. While mixture is heating, melt butter in microwave. Add flour to butter and mix together with a fork to form a roux. Add ¾ of the roux to the soup. Stir constantly to blend. Continue adding mixture until soup has thickened to desired consistency.

You can make this soup vegetarian by omitting the meat and adding 2 tsp. of vegetable soup base to the boiling water.
