One cup self rising flour
(if using all purpose flour, add one tsp baking powder)
One cup yellow cornmeal
1/2 cup milk
3 tbs. sugar
1/2 cup grated cheddar cheese
2 eggs
one stick of butter softened
One 12 oz can cream corn
4 finely chopped jalapeno peppers without the seeds

Directions:

Grease a baking dish with butter or shortening.

Mix all ingredients together until well blended. Pour into baking dish and bake in a preheated 400 degree oven for approximately 40 mins. or until an inserted toothpick comes out clean and crust is nicely browned
