Only choose the small end of a Prime Rib

Bring the Rib Roast to room temperature.
Run the roast under water to wet it down and drip off the water. Heavily sprinkle the whole roast with garlic powder, salt and pepper.
Preheat the oven to 350 degrees.

After oven is preheated, add roast in the medium tray and cook for one hour precisely. Then turn off oven, and do not open oven for at least 2 hours. It is extremely important that you do not open the oven. The roast will cook in it's own juices in the meantime.

After 2 hours, and 45 minutes before you want to serve, turn oven back on to 350 degrees. If you want the roast rare, cook for an additional 25 minutes, for med rare, 30 minutes, etc for each perfect doneness.

Be sure and let stand 5 minutes before cutting.
