1 Tbls. Butter
2 eggs
1 cup half and half
1 cup plain yogurt
½ cup shredded Swiss cheese
1/3 cup crumbled feta cheese
1/3 cup parsley
1 tsp dried cilantro
1 tsp dried oregano
1 package uncooked fresh angel hair pasta
1 jar (16 oz) mild thick and chunky salsa
1 ½ lb medium shrimp
½ cup shredded Monterey Jack cheese

Grease a 12.8 inch pan with butter. Combine eggs, half and half, yogurt, feta, Swiss cheeses and seasonings. Spread ½ the pasta in bottom of prepared pan. Cover with ½ cup of salsa. Add ½ the shrimp. Cover with remaining pasta. Top with remaining ½ cup salsa. Spread egg mixture over pasta. Top with remaining shrimp. Sprinkle Monterey Jack cheese over top.

Bake in preheated 350 degree oven for 30 minutes or until bubbly. Let stand 10 minutes. Garnish with avocado slices and fresh cilantro.
