Grandma Phillips' Raisin Pie Recipe

Filling:
1 box of raisins
1 c sugar
dash of salt
2 TB lemon juice
3 TB cornstarch
1/4 c butter
1/2 tsp salt
1 tsp vanilla

Pie Crust:
1 c flour
1 c brown sugar
1/2 can flake coconut
1/2 tsp vanilla

Directions:
Directions:
Preheat oven to 350º

Filling:
Cook the raisins with 1 c of sugar, dash of salt, lemon juice until sugar is melted and raisins are soft. Add the cornstarch and vanilla to thicken the mixture.

Pie Crust:
Combine the ingredients for the crust and stir until mixture forms a ball. Do not overwork the dough or it will become tough.

Roll out half of the dough and place in the pie pan. Add the filling. Roll out the remaining dough and place it over the pie, crimping the edges to ensure that the top and bottom crusts are sealed to prevent leakage. Bake the pie for 20-25 minutes.

This was one of Dad's favorites!

Grandma used to add a very thin layer of buttercream frosting after the pie cooled for about 30 minutes.
