3 eggs
1 cup white Karo syrup
1/2 cup cup white sugar
1/2 cup loosely packed brown sugar
1 tsp. vanilla extract
1/2 tsp salt
1 tsp. lemon juice
2 T butter
1 cup pecans

Directions:
Directions:
- Preheat oven to 350 degrees
- Beat eggs slightly (just enough to break yolks) in a large bowl. Add sugar, salt, vanilla, Karo and lemon juice and stir together (don't beat).
- Melt butter in small skillet; add pecans while hot and stir to be sure all pieces are covered. Pour into egg mixture and quickly stir together.
- Pour mixture into pie crust. Bake at 350 degrees on a cookie sheet for 50 to 55 minutes. Check on the pie after 40 minutes to be sure it doesn't overcook.

This is my friend Chris Heller's grandmother's recipe for pecan pie and it is the absolute best pecan pie recipe I have ever tried. You can make this recipe gluten free by using gluten free vanilla extract (generally real vanilla) and a gluten free pie crust.
