Mix in top of double broiler and cook until thick:
1 c. brown sugar
3 egg yolks beaten
1 1/2 c. cooked or canned pumpkin
1/2 c. milk
2 tsp. cinnamon
1/2 tsp. each ginger, salt and allspice
1 envelope unflavored gelatin
1/4 c. cold water

Dissolve gelatin in hot custard. Beat with egg beater until fluffy. Fold in 3 egg whites stiffly beaten with 2 tbsp. sugar. Pour into baked pie shell.
