2 lbs. chicken breasts, cut up
2 T. olive oil
3 green onions, finely sliced
1/2 tsp. each salt and pepper
1/4 tsp. cayenne pepper
1 12-oz. pkg. frozen spinach, thawed
1 14-oz. can artichoke hearts, drained
1 c. sun-dried tomatoes in oil, sliced and drained
8 slices light wheat bread, crusts removed
2 c. Monterey Jack cheese, shredded
6 eggs
2 c. fat free milk
2 tsp. Dijon mustard

Cut up chicken breasts into bite sized-pieces. Heat oil in a skillet over medium heat. Cook onions in oil until tender then add chicken, salt and peppers. Cook about 7-10 minutes. Squeeze water out of spinach and artichokes. Tear artichokes into small pieces and slice sun-dried tomatoes into small strips. Spray a 9" X 13" casserole dish. Cover bottom with bread slices and then layer with chicken, spinach, artichokes, tomatoes and cheese. Combine eggs, milk and mustard and blend until uniform. Pour mixture over casserole, cover and refrigerate overnight. Bake uncovered in preheated 350º oven until golden brown, about 50-60 minutes.
