1/2 cup shortening
1/8 tsp salt
1 cup boiling water
1 cup sifted flour
4 eggs unbeaten

Directions:
Directions:
Add shortening and salt to boiling water and heat to boiling. Reduce heat, add flour all at once and stir vigorously until mixture forms ball around spoon leaving pan clean. Remove from heat. Add 1 egg at a time beating very thoroughly after each addition. Continue beating until mixture is thick and shiny and breaks from spoon. Shape on ungreased cookie sheet, using 1 tsp or TBSP of pastry for one puff depending on desired size. Bake in very hot oven (450 F) 20 mins. Reduce heat to moderate (350 F) and bake about 20 minutes longer. Cool. Make slit on one side of each puff and fill with whipped cream or cream pie filling. Makes 1 dozen large or 4 dozen small.

Cream Pie Filling

1 1/2 C milk
1/4 C sugar
1/4 tsp salt
3 TBSP flour
1 egg yolk
1 TBSP butter
1/2 tsp vanilla

Scald 1 cup milk over boiling water. Mix sugar salt flour and remaining milk together. Stir into hot milk and cook slowly until thickened, stirring constantly. Cover and cook over boiling water for 5 minutes. Add mixture slowly to egg yolk and cook 1 minute longer. Add butter and vanilla. Cool. Pour into pastry shell and spread with whipped cream. makes 1 (8 inch) pie. Or use to fill cream puffs.
Banana-Use 4 ripe bananas fill pastry shell with alternate layers of sliced bananas and cooled filling.
chocolate-Add 1 ounce (square) chocolate, melted, and 2 tablespoons sugar.
