3 eggs, beaten
1 C. vegetable oil
1 1/2 C. sugar
2 C. grated zucchini
2 tsp. vanilla
2 C. flour
1/4 tsp. baking powder
2 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
1 C. raisins, if desired
1 C. nuts

Directions:
Directions:
Beat eggs lightly; stir in oil, sugar, zucchini and vanilla. In separate bowl mix flour, baking powder, soda, cinnamon and salt. Sir into egg mixture until well-blended. Stir in raisins and nuts. Spoon into well-greased large or 2 small loaf pans.

Bake 350º for approximately 1 hour.
