1 can Blackeyed Peas (rinsed)
1 can Shoepeg Corn (drained)
1 Green Pepper (chopped)
1 Red or Purple Onion (chopped)
1 Tomato (diced)
1 or 2 Avocados (diced)
3 Limes (juiced)
2 T. White Vinegar
Fresh Cilantro to taste

Directions:
Directions:
Combine first seven ingredients. Mix together the lime juice and vinegar then pour over the vegetables and lightly mix in. Add cilantro.
