1 - Jar of Mole (most of these itesm will be found in "Ethinic" isle at any grocery store)
1/2 - Bar of Abuelita Chocolate (pound the full bar against edge of counter to cut)
10 - Maria Cookies -or- 3 tbsp. of plain peanut butter
1 tbsp of cooking oil
1 tbsp of salt (use less if desired)
Whole Chicken (or family size pre-packed pre-cut pieces)
2 cloves of Fresh Garlic
1/2 brown onion
2 - lemons

Directions:
Directions:
1. Start by boiling chicken in large pot with garlic cloves and salt until fully cooked (if using bone in chicken cook until meat is falling off the bone) save the hot chicken broth as needed below.
2. Slice thin layers of onion and soak in fresh lemon juice (refrigerate until ready to serve).
3. In a large skillet pour cooking oil and heat, once ready, brown cookies (turning over frequently to avoid burning).
4. Using blender place cookies, chocolate (or peanut butter), mole and fill the rest of the blender with the chicken broth. (the heat from the broth will melt the chocolate allowing to blend easier.
5. Blend until thick soup like
6. Pour mole into large pot on low heat and warm mole stirring periodically to avoid sticking or burning.
Serve over chicken as desired or shred chicken and mix into large pot with mole (my preference is shredding and mixing together). Top off with onions and serve with spanish rice and beans or in a corn tortilla as a mole taco.

Sorry I don't normally use measuring tools; if you use peanut butter it will be trial-in-error (may need a bit more). Also, may need to use more salt, to be safe use the amount noted but may need more as desired. Enjoy!
