9 medium-size round red potatoes, scrubbed
(4 1/4 pounds)
6 slices bacon
1 med onion, chopped
2 T. all-purpose flour
2 T. sugar
2-3 t. salt
1/8 t. pepper
1/2 t. celery seeds
3/4 c. water
1/3 c. apple cider vinegar

Directions:
Cook potatoes in boiling water to cover 25 - 30 minutes or until tender. Drain and cool 10 minutes. Cut potatoes into 1/2-inch-thick slices and set aside.

Cook bacon in a large skillet until crisp, and remove bacon, reserving drippings in skillet. Crumble bacon and set aside.

Cook onion in reserved drippings, stirring constantly, until tender. Add flour and next 4 ingredients, stirring until blended. Cook 1 minute over medium heat, stirring constantly. Gradually stir in 3/4 cup water and vinegar; cook until sauce is thickened and bubbly.

Layer 1/3 each of potato and bacon in a 2 1/2 quart serving bowl; drizzle with 1/3 of sauce mixture. Repeat procedure twice, serve immediately.

A woman at Meals On Wheels made this to go with German Red Cabbage and she was kind enough to share. Try them together with German sausage. Wonderful! It is a Southern Living 1994 recipe.
