1 egg white
1cup of whipping cream
1 tsp. vanilla
1/2 cup chocolate chips
1/4 cup pecans
4 Tbs. sugar

Directions:
Directions:
Beat egg white until stiff. Add 2 tbs. of sugar. Whip whipping cream and add 2 tbs. sugar to this. Blend egg white mixture and cream mixture together. Let get firm in the freezer. (approximately 1 hour) In the meantime roast the pecans. In a muffin pan line 7-9 slots with cupcake liners. When the egg/cream mixture is firm, melt the chocolate chips. Blend the melted chocolate chips and pecans with the firm egg/cream mixture. Fill muffin cups with mixture. Keep frozen until ready to eat.

My grandparents lived in the same town where Fran lived (Kosciusko, Mississippi), and thankfully I got to know her. We went to many high school functions together, and one summer we even went to camp together----we had a blast! Fran was so much fun; the life of the party. We kept in touch as adults, which I'll always count as a blessing.
