6-8 medium sweet potatoes
2 tbsp. granulated sugar
2 eggs
2 tbsp. melted butter
Topping: 1/2 cup chopped pecans
1/2 stick (4 tbsp.) butter
3/4 cup brown sugar
1 tsp cinnamon
1/2 tsp ground nutmeg

Directions:
Directions:
Preheat oven to 350ºF
Boil sweet potatoes with skin on until fork tender.
Let cool for a few minutes and then remove skin.
In a mixing bowl combine cooled sweet potatoes, sugar, butter and eggs.
Beat until smooth.
Pour into 8x8 inch square baking dish.
To make topping:
Melt butter in a sauce pan over medium heat.
Add brown sugar, cinnamon, and nutmeg, cook until well mixed and then add pecans.
Drop topping mixture onto the sweet potato mixture and spread to cover.
Bake for 30 minutes, then remove the oven and let cool for 10 minutes before serving.
