1 clove garlic
1/4 c. shallots
1 onion
1/2 c. sliced mushrooms
2 small celery ribs
3 carrots sliced
5 red potatoes cooked and quartered
2 tbsp. oil
1 lb. tenderloin
2 c. brown sauce
1/2 c. diced tomato
1/4 c. green onion
1/4 c. grated Parmesan

Directions:
Directions:
Heat oil on medium heat, brown tenderloin then remove meat and set aside. Add tbsp. oil until almost smoking. Add garlic, shallots, onions, mushrooms, celery, carrots and potatoes. Saute on high heat until golden brown. Bring to a boil stirring. Simmer down and then garnish with tomatoes and cheese.
