* 4 Large Boneless Chicken Breasts
* 1/2 tbsp salt & 1/2 tbsp pepper
* 2 tbsp olive oli
* 2 tbsp butter
* 1/2 cup green onion
* 2 tbsp lemon or lime juice
* 3 tbsp chopped parsley fresh or dried
* 2 tbsp Dijon style mustard
* 1/2 cup chicken broth

Directions:
Directions:
* Season chicken with salt & pepper
* Heat 1 tbsp each of oil & butter
* Brown chicken - transfer to warm platter
* Add green onion, lemon or lime juice, parsley & mustard
* Cook the above 15 seconds
* Whisk in broth, Stir until sauce is smooth
* Whisk in remailing butter & oil
