1 30 oz can of black beans, drained and rinsed
1/3 cup lime juice
1/2 cup olive oil
1 garlic clove minced
1 tsp sea salt
1/8 t cayenne pepper
1 1/2 cup thawed frozen corn
1 avocado peeled, and cut into 1/2 inch pieces
1 sm red bell pepper seeded cut into 1/2 inch pieces
2 med. tomatoes cut into 1/2 in. pieces
4 green onions, finely chopped
1 fresh hot chile pepper seeded and minced (have used jarred jalapenos - works too)
1/2 cup coarsley chopped cilantro (optional)

Combine lime juice, olive oil, garlic salt and cayenne in dressing shaker - shake until well combined. In salad bowl, combine beans, corn, avocado, bell pepper, green onions, chile pepper and cilantro. Shake dressing and pour over salad. stir and serve.

Personal Notes:
Keep the corn cold but thawed as it will "chill" the salad slightly without affecting the consistency of the oil in the dressing.
Great for a summer BBQ.
