- 1/2 c. butter
- 1/2 c.sugar
- 2 eggs

- 3/4 c.flour
- 3/4 c. ground almonds (you can use ground rice
if you can find it. Good luck!
- 1 tsp. baking powder
- 6 drops almond flavouring
- 8 tbsp. cream

- pastry for small tart shells
- raspberry jam (seedless is preferred)

- Make pastry (Crisco) and cut out rounds to put
in small tart pans. Put pans in fridge until the
filling is ready.

- cream together the butter, sugar, & eggs.

- mix together the dry ingredients and then add
1/2 to the butter, eggs & sugar mixture.

- add the cream & almond flavouring, beating
well (with electric mixer)

- Now add the remaining dry ingredients and
beat until light & fluffy.

- Put 1/2 tsp. of jam in bottom of tart shells
and cover with heaping tsp. of batter.
Spread around to cover jam.

- Bake at 375 for 15 - 20 mins or until
golden brown on top.

- DO NOT UNDERCOOK

- Cool and drizzle with a mixture of milk,
almond flavouring, & icing sugar.

These are a Christmas Eve favourite. They might be a little piddley to make, but definitely are worth it. They get easier each time you make them.
