1 1/2 T. peppercorns
1 T. coriander seeds
1/2 tsp. salt
2 to 2 1/2 lbs. beef tenderloin
1/2 T. oil

Directions:
Directions:
Heat over to 425º. Oil a roasting pan. Combine peppercorns, coriander and salt and grind coarsely. Rub the beef with the 1/2 tsp. of oil and roll in peppercorn mixture to coat. Cook about 25 minutes for rare, 30 to 35 minutes for med. rare. Let stand 10 minutes before cutting into slices.
