2/3 cup honey
1 cup sugar
1/3 cup shortening
1 egg beaten
1/3 cup water

4 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
2/3 cup chopped nuts
1/3 candied fruit, chopped
1 tsp lemon zest or 1/2 tsp lemon extract

1 cup powdered sugar
4-5 tsp. milk
1/4 tsp. lemon extract

Directions:
Directions:
Boil sugar, honey and shortening together until melted.Cool. Beat egg and add to water. Set aside.
Mix and sift flour, soda, salt and spices together.
Add egg mixture and dry ingredients to honey mixture. Add nuts and candied fruit.

Place on waxed paper and shape into a ball. Flatten.
Allow dough to ripen a few days to improve texture and flavor. Roll out 1/2 inch thick rectangle. Place on lightly greased cookie sheet with a raised edge. Continue to roll to corners of sheet.

Bake in 350º oven for 15 to 20 minutes.
Frost while warm with sugar glaze made by combining powdered sugar, milk and lemon extract. Sprinkle with red and green sugar. Cut into 1x2 inch rectangles.

Nana bakes these in October and stores them in a tin with a cut up apple.This allows them to season.
