"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Combine warm milk, shortening, 1/3 c. sugar and salt in large bowl. Stir to blend. Crumble yeast into mixture; let stand until softened. (If you use dry yeast, reduce milk to 3/4 c. Soften yeast in 1/2 c. very warm water, not hot). Add the eggs, mix well. Gradually add the flour, beating well after each addition, to form a soft dough. Knead on floured surface until smooth and satiny, 3 to 5 minutes. Place in greased bowl and cover. Let rise in warm place until light and doubled in size, 30 to 60 minutes. Divide dough in half; roll out each half on floured pastry cloth or board to 15" X 12" rectangle. Brush with melted butter. Combine 1 cup sugar and cinnamon and sprinkle on dough. Roll as for jelly roll, starting with 15" side. Pinch edges. Cut into 1" slices; place in greased 13 X 9" pan or 24 muffin cups. Cover. Let rise in warm place until light and doubled in size, 30 to 60 minutes. Bake for 18-20 minutes at 350º.
Frost with powdered sugar frosting made with 1 cup sugar, 2 Tblsp. milk, and 1/2 tsp. vanilla. Makes 2 dozen rolls.
