(2) 15 oz cans Green Enchilada Sauce (Hatch is a great brand)
1 carton frozen green chile -OR- 5-6 cans chopped green chiles
1 lb. chicken, cooked and shredded
1 can Cream of Chicken Soup (I use low fat)
8 oz sour cream
16 corn tortillas
Large bag shredded Mexican or Cheddar Cheese

Mix Sauce:

Green Enchilada Sauce
Green Chile (well drained, water squeezed out)
Shredded Chicken
Cream of Chicken Soup

Simmer sauce for at least one hour. Just before assembly, add the sour cream.

Assemble Enchiladas in a 9x13 greased casserole:

Sauce
Tortillas
Cheese
REPEAT with the final layer being cheese on top.

Bake at 350 for 30 minutes until bubby.

You can buy either mild or hot green chile in the frozen section of the grocery store. I usually base it on who I'm cooking for!
