13 oz pkg dry Sun Luck Phad Thai Rice Sticks
4 T Canola Oil
4 Cloves Garlic minced
1/3 C Fish Sauce (found in oriental section)
2 Bunches of Green Onions cut into 1 " pieces
3 T Sugar
2 tsp Paprika
8 oz or 1/2 lb Bean Sprouts
Opt: 2-4 Eggs or 1 lb Ground Turkey

Opt: 1/2 C Peanuts chopped fine or 1 T Peanut Butter

Soak rice sticks in warm water on low till almost tender (do not allow to boil). Heat oil in wok or large skillet with sides. Add garlic and saute till browned. Add ground turkey or eggs and scramble. Drain rice sticks and rinse throughly with cold water. Add drained rice noodles to wok or skillet. Keep heat high and stir fry till noodles are translucent, adding up to 1/4 cup water if needed. When noodles begin to stick together, add fish sauce, sugar, paprika. Just before serving stir in green onion and bean sprouts. Heat 1 minute more. Garnish with peanuts or stir in peanut butter.

I just love this recipe but I leave out the eggs. You can add tofu or shrimp in place of optional additions.
