Crust:
1 1/2 cups graham cracker crumbs
1/2 cup sugar
1/2 cup butter
1 teaspoon cinnamon

Filling:
3 egg yolks
1 can sweetened condensed milk
1/2 cup of key lime juice or lime juice

Whipped Topping:
1 pint whipping cream
1/2 teaspoon vanilla
3 tablespoons sugar

Crust:
Mix all crust ingredients together. Pat a thin layer of crumb mixture on the bottom and sides of a springform tarte pan. I don't use all the mixture.

Filling:
Beat egg yolks lightly. Add condensed milk and beat again with electric mixer. Add lime juice and mix until smooth. Pour into crust. Bake at 350 degrees for 12-15 minutes. Let cool.

Whipped Topping:
Mix all ingredients together and beat with an electric mixer till light and fluffy. Pour over cooled pie and refrigerate.

This is an Olmstead Family favorite! John's dad had a key lime tree in his backyard when he lived in the Florida Keys. He would ship us a box of key limes for key lime pie and vodka & tonic's!
