1 lb. andouille sausage, cut pieces 1/4" thick or
a smoked sausage (for less heat then andouille).
1 (10-oz) pkg frozen vegetable (mixed veggie)
1 (32 oz) container of chicken broth, low-sodium,
1 (14.5-oz) can fir-roasted diced tomatoes w/garlic,
2 C long-grain rice (uncooked)
2 T parsley - dried or fresh;
1 tsp Cajun seasoning and 2 tsp Worcestershire sauce;
1/8 tsp red pepper; 2 T green onions, sliced thinly

Cook sausage in Dutch oven about 8-min. until brown; remove with slotted spoon & drain on paper towels. Add seasonings to Dutch oven with hot dripping, and saute 4-5 min. Add broth, next 5 ingredients, sausage and red pepper. Bring to a boil, cover, reduce heat to low, and cook 18-20 min. or until rice is tender and liquid is absorbed. Top with green onions, and serve immediately.
