1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter or margarine, softened
1 egg
1 1/4 cups Gold Medal® all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Directions:
Directions:
1) Mix sugars, peanut butter, shortening, butter and egg in a large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.
2) Heat oven to 375 degrees F
3) Shape dough into 1 ¼-inch balls. Place 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar.
4) Bake 9-10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.

Excitement consumes my mind as I reminisce on the first time I baked Peanut Butter Cookies with my Nana. When I first baked peanut butter cookies I got a feeling of satisfaction when I saw how they came out. I remember almost putting them into the piping hot oven when my Nana told me that I forgot an essential step! I was confused until I saw her use a fork to create the crisscross design on the top of the cookies. As the aroma and warmth of the cookies filled the kitchen, I sat inpatient waiting to take the first bite of the cookies. From the first time they enter my mouth to the last bite, I'm in a state of complete relaxation. No matter what the weather is or what mood I am in when I eat them, my spirits are lifted and everything is improved by the scrumptious taste of Peanut Butter Cookies.
