4 potatoes, 4 carrots, 1 onion, 1 pound of bologna, 6 eggs, 2 cans of green peas, 1 cup finely chopped dill pickles, black pepper, 1/2 bunch dill, 2 cups of mayonnaise

Directions:
Directions:
Place potatoes and carrots, unpeeled, into a stock pot. Add enough boiling water to cover. Simmer until done when pricked with a fork, but not falling apart. Cool completely and peel. Put the eggs into a saucepan of cold salted water, bring to simmer. After 12 minutes remove the eggs and let cool. 1. Dice potatoes and carrots into the cubes. 2. Put them together into big bowl. 3. Open can with peas and remove liquid , add to the bowl. 4. Dice eggs and bologna into the cubes, add to the bowl. 5. Dice dill pickles, chop onion and dill. add to the bowl. 6. Mix everything, season with ground black pepper. Add mayonnaise and mix again. Olivier is ready to be served.

Olivier salad is a traditional dish used in New Year's celebration. It's preparation takes practice as it has to be served on a special occasion. It takes patience to prepare it but also the salad needs to be prepared in happy, inspirational mood. You have to carefully do each step. If the dish is prepared in angry mood and hasty manner it will come out with a sour taste.To give it any significance there has to be some excitement when serving the dish. As you are celebrating some special occasion. When Olivier is present at the dinner table it symbolizes the importance of that occasion. This mouthwatering salad is a signature dish in my memory from any significant moments at the dinner table. It brings back memories of past holidays and celebrations.
