Wash and Stem crab apples and place in a large kettle. Just cover with water and bring to a boil. Simmer until the crabs crack and fall apart. Strain and set the juice aside for jelly. Take the remainder and run through a sieve - save the pulp for apple butter. The juice and the pulp can be frozen to be made up later if necessary.
