You must have a mature bird or it will cook to pieces. Cut your chicken up in the usual manner and arrange in a large frying pan, sprinkle with salt and add onion rings if you wish. Cover with water and bring to a boil-reduce heat and simmer until all the water has evaporated. Let the chicken simmer until well browned (do not burn) Now add water until the chicken is almost covered (I like to turn the pieces at this time) Keep the chicken simmering until done. Allow a couple of hours because you know you can't rush an old hen!
